Conch Salad, the Way It’s Always Been!!

If there was one recipe I had to share first after coming back to the blog, it had to be the Bahamian conch salad recipe,

When I was living in Canada, one of the foods I craved the most was conch salad. As a matter of fact, I missed anything with conch, but conch salad was at the top of the list.

I missed every kind. “Scorch” conch with plenty lime and pepper. Tropical conch salad with sweet fruit like pineapple and mango mixed in. But most of all, I missed the OG conch salad made with green tomatoes. People have started experimenting with the original like adding mayonnaise like the  /best-bahamian-crawfish-salad or boiling the conch, but just give me the old tried and true classic Bahamian conch salad. Oh, my Lord! Just writing about it now has my mouth watering.

And let me tell you, a fresh conch salad with a cold Kalik beer, the beer of The Bahamas, is how you get the weekend started. Nothing fancy. Just good food, a cold drink and that unmistakable taste of home.

Conch salad tastes like home to me. It is fresh, bright, spicy and full of flavour. There is no cooking and no long wait. Just fresh conch cut down small with sweet pepper, onion, tomatoes, plenty of citrus and enough goat pepper to wake up the senses.

When someone visits The Bahamas and asks me what they should eat, conch salad is always one of the first things that comes to mind. You can find it at roadside stands, fish markets and little conch shacks across the islands. But it is also something you can make right at home.

For my first recipe back, I did not want to change anything or try to make it fancy. I wanted to begin with a true Bahamian classic, made the way I know and love.

This is the traditional version — Just the way it’s always been done.

Ingredients (Bahamian conch salad recipe)

  • 4 fresh conch, cleaned and tenderized
  • 1 green bell pepper, finely diced
  • 1 medium onion, finely diced
  • 2–3 tomatoes, diced (I prefer mines with green tomatoes. Ripe tomatoes alter the flavor of the juice)
  • 1–2 scotch bonnet peppers, seeded and minced (adjust to taste)
  • Juice of 6–8 limes
  • Juice of 2 oranges
  • Salt, to taste

Method

Prep the conch. Dice the cleaned, tenderized conch into small, even pieces. The finer the dice, the better it takes on the citrus.

Build the base. In a large bowl, combine the diced conch with the peppers, onion, tomatoes, and scotch bonnet.

Add the citrus. Pour the lime and orange juice over everything. The citrus is what “cooks” the conch here, so make sure everything is well coated.

Season and rest. Add salt to taste, toss well, and let it sit for about 10–15 minutes before serving so the flavors come together.

Serve immediately. Conch salad is best fresh — it doesn’t keep well, and that’s part of the point. It’s to be eaten right away, served with a cold beverage. If any is leftover though, put it in the freezer in a tight lid container and it holds up pretty well. Not like the fresh batch but pretty good.
