Caribbean Spiced Sweet Potatoes

These Caribbean sweet potatoes will make an excellent side dish pearing well with grill meat and fish

Ingredients
  

  • 2 to 3 large sweet potatoes
  • 2 teaspoons ginger
  • 2 tablespoons brown sugar
  • ½ teaspoons cinnamon
  • ¼ teaspoons nutmeg
  • 1 teaspoon lime zest
  • 1 tablespoon lime juice
  • 1 tablespoon coconut oil
  • ¼ cup mango juice
  • 1 teaspoon seasoning salt
  • Salt and black pepper to taste
  • ¼ cup of chopped green onions or parsley for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Mix the brown sugar, ginger, cinnamon, nutmeg, and seasoning salt in a small bowl.
  • In another bowl, combine the lime zest, lime juice, melted coconut oil, and mango juice.
  • Wash and peel 2-3 large sweet potatoes. Cut them into 1-inch cubes.
  • Place the sweet potato cubes in a large mixing bowl.
  • Pour the liquid mixture over the sweet potatoes and toss to coat evenly.
  • Sprinkle the dry spice mixture over the sweet potatoes and toss again to ensure they're well coated.
  • Season with salt and black pepper to taste.
  • Spread the seasoned sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for 25-30 minutes, turning once halfway through, until the potatoes are tender and lightly caramelized.
  • Remove from the oven and let cool for a few minutes before serving.
  • Garnish with green onions or parsley and serve!!!
