Preheat your oven to 400°F (200°C).
Mix the brown sugar, ginger, cinnamon, nutmeg, and seasoning salt in a small bowl.
In another bowl, combine the lime zest, lime juice, melted coconut oil, and mango juice.
Wash and peel 2-3 large sweet potatoes. Cut them into 1-inch cubes.
Place the sweet potato cubes in a large mixing bowl.
Pour the liquid mixture over the sweet potatoes and toss to coat evenly.
Sprinkle the dry spice mixture over the sweet potatoes and toss again to ensure they're well coated.
Season with salt and black pepper to taste.
Spread the seasoned sweet potatoes in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, turning once halfway through, until the potatoes are tender and lightly caramelized.
Remove from the oven and let cool for a few minutes before serving.
Garnish with green onions or parsley and serve!!!
