Crispy and juicy  – Grilling the chicken wings at an even temperature (400 degrees F) allows the wings to remain juicy while gaining that grilling flavor and forming a crispy skin.

Familiarity of flavors – These flavors are very familiar to everyone. The classic buffalo wings are present in the buffalo bbq sauce, along with the specific elements of barbecue. 

What You’ll Need for BBQ Buffalo Wings Recipe:

  • Chicken Wings – Team drums or team flats? Neither will last long with this recipe.
  • Adobo All Purpose Seasoning– Not only is this the source of salt for the rub, but it provides an onion and celery flavor to the rub
  • Black Pepper – Adds a subtle pop of heat without overpowering or competing with anything.
  • Smoked Paprika – There is a mysterious hint of smoke in every component of these smoked hot wings. This adds the first layer to that kiss of smoke.
  • Garlic Powder – Because there is sweetness in the sweet and spicy buffalo sauce, it’s all about balancing the sweet with savory flavors. This adds an aromatic and sharp kick.
  • Chili Powder –  Offers an earthy flavor to the rub.
  • Limes – I like the zing that it gives to the wings
  • Canola/Vegetable Oil – This will help adhere your spice mix to the wings and help you achieve that crispy skin while preventing the wings from sticking to your smoker or grill. 
  • Butter – it provides a creamy smooth feel to the sauce
  • BBQ Buffalo Wings Sauce –  Smoky, sweet, spicy, and a little creamy from a kiss of silky butter, Buffalo BBQ Sauce perfectly combines the best of both flavors.

How to Cook BBQ Buffalo Wings:

  • STEP 1: – Combine your spice mix, lime, and oil with your wings, ensuring they are fully coated. If you have the time, spread the wings out on a wire rack fitted into a baking sheet and allow your wings to hang out in the fridge for a couple of hours, up to overnight. This will allow the air to circulate the wings, ensuring you get that crispy skin bite while allowing the seasoning to permeate the wings.
  • STEP 2: – Prepare your charcoal grill for two-zone cooking by banking the charcoal to one side. Allow the wings to smoke until they reach an internal temperature of about 165°F.
  • STEP 3:  – Crispy skin is the trademark of the perfect wing. Cooking these wings on a charcoal grill, move them directly over the coals. Please don’t go for a beer break, as they go fast. You will want to continue to flip them and rotate them so they don’t burn.
  • STEP 4:  –  Add your crispy wings to a bowl and let the sauce pour! Please give them a toss to ensure every nook and cranny is draped in the sticky sauce. Whether or not you decide to share is entirely up to you.

Variations for BBQ Buffalo Wings Recipe

You can adjust the flavor profiles of these barbecue buffalo wings recipes by adjusting different elements in the sauce recipe.

  • Sweeter – You can create a sweeter sauce with brown sugar. Allow the sauce to simmer for 10 minutes before tasting. Add sugar based on your desired level of sweetness and allow it to simmer to dissolve fully. 
  • Tangier – Give a tiny splash of apple cider vinegar at the end if you want it tangier. Remember, it doesn’t take much to make the taste buds tingle.
  • Spicier – You can adjust the heat in both the wings with the rub and the spice level of the Barbecue Buffalo wing sauce. Increase the chili powder when creating your spice mix. Want a little extra kick in the sauce? Try adding cayenne or another type of chili powder to the sauce. 

Tips for Crispy Chicken Wings

  • Dry-Brine ahead of time. The step to achieving that is to create a dry wing. Allowing the wings to refrigerate on a rack for a couple of hours or overnight lets air circulate them while drying them out.
  • Cook the wings for longer. In addition, wings are much more forgiving than other cuts of chicken. Where some cuts of chicken are done at 165°F, chicken wings are better cooked at 180-185°F.

Ingredients:

  • 2-3 lbs chicken wings
  • 2 tbsp olive oil
  • 1 lime
  • 2 tsp garlic powder
  • 2 tsp adobo all-purpose seasoning
  • 2 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp black pepper
  • 1/4 cup butter
  • 1-2 cups BBQ Buffalo Wing Sauce – Click Here

Directions:

  • Clean chicken wings ensuring they are feather-free, and coat them with olive oil and lemon or lime. Preheat oven to 400 degrees F.  Season wings with one teaspoon of garlic powder, salt, and pepper.
  • In a bowl, mix flour, cornstarch, the remainder of garlic powder, salt, and black pepper. Coat wings in flour mixture and transfer to a baking sheet covered with wax paper. Bake wings to a golden brown for 45 – 60 minutes, depending on your wing size.  Rotate wings mid-way.
  • In a saucepan, combine Franks hot sauce and bbq sauce and bring to a simmer. Generously pour wings and enjoy! Save the remaining sauce for dippers.

Ingredients:

  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

  • Mix the olive oil, soy sauce, lemon juice, minced garlic, paprika, cayenne pepper, dried oregano, salt, and pepper in a mixing bowl. This will create your marinade.
  • Place the chicken wings in a large resealable plastic bag or a shallow dish.
  • Pour the marinade over the chicken wings, ensuring they are well-coated. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 1-2 hours, preferably overnight. This allows the flavors to penetrate the chicken.

How to grill chicken wings on gas grill?

To grill BBQ Buffalo wings on a gas grill, preheat the grill to medium-high heat, around 375-400°F (190-200°C). While the grill is heating up, season the chicken with BBQ rub or marinade. Once the grill is hot, brush the grates with oil to prevent sticking. Place the chicken pieces on the grill, skin-side down, and close the lid. Cook for 6-7 minutes on each side, turning occasionally, until the internal temperature reaches 165°F (74°C) and the juices run clear.

During the last few minutes of cooking, brush the chicken with your favorite BBQ sauce and let it caramelize for added flavor. Keep a close eye to prevent burning. Once done, remove the chicken from the grill, rest for a few minutes, and serve your delicious BBQ chicken with your preferred side dishes.
