Guava Cheesecake Cookies

Ingredients for Cookie Dough:

  • 1 cup room temperature butter
  • ½ cup granulated sugar
  • 1 egg yolk
  • 1 tsp coconut extract
  • ¼ tsp salt
  • 2 cups all-purpose flour

Ingredients for Guava Cheesecake Filling:

  • ½ cup room temperature cream cheese
  • ½ cup sifted confectioners sugar
  • ½ tsp vanilla
  • ½ tsp coconut extract
  • 4-5 tbsp guava puree
  • Pinch of salt

Directions:

  • Preheat oven to 350 degrees F. Add cream, butter, and sugar and mix until smooth in a stand or hand mixer.  Add in egg yolk and coconut extract and mix.  Then add flour and salt and mix until combined. Roll the cookie dough into balls using a medium scoop and place it on silicone-lined baking sheets.
  • Carefully make an indentation in the cookie using a melon baller or teaspoon.  Be careful to press only some of the way through. Then chill the cookie for at least an hour to avoid spreading. Mix cream cheese filling with cream cheese, confectioners sugar, vanilla extract, coconut extract, and salt.  Make sure it’s lump free and smooth in a food processor.  Place mixture in a bowl and fold in guava puree.
  • Remove cookie dough from the freezer and add the cream cheese filling to the indentation.  Remember to supply the right amount. Bake cookies for 10 – 12 minutes or until golden brown. Remove from oven and let cool. You can dust with powdered sugar, cocoa powder or drizzle with icing sugar for extra flair.
